lol-ing, Grocery Shopping sucks.

I'm a college kid, live in a nice apartment alone (my parents are great and knew it's what i needed), BUT i don't know what i like to eat, nor what to buy at the mart - I usually eat crap food and anything that takes <5 mins to make.

But i want to eat better but don't know how, any suggestions from the adults here :-)?

Re: lol-ing, Grocery Shopping sucks.

Learn to make 3 old fashion dinners (this will impress your date!). Each take less than 30 minutes from fridge to plate.

1) Steak (need some seasoning) and a microwaved baked potatoes (butter and sour cream, perhaps bacon bits) and a bag of salad.
2) Salmon (butter, lemon pepper and bake), frozen twice baked potatoes and steamed (in the microwave) broccoli.
3) Spaghetti (noodles are a buck a box) with meatballs (from the freezer section) with a per-bagged salad, don't forget to add croutons.

Hi Musicman --

As a beginner cook, you need to start with simple recipes.

Consider trying Chillies, for example:

3-Bean Chili

Serves: 6
Prep Time: 5 minutes
Total Time: 30 minutes

Ingredients:
1 tablespoon olive oil
1 small onion, diced
1 pound lean ground turkey breast*
1 14.5-oz can can diced tomatoes with jalapenos
1 1/4 cup canned, low sodium chickpeas, drained
1 1/4 cup canned, low-sodium black beans, drained
1 1/4 cup canned, low-sodium kidney beans,drained
1 can (10.5-oz) low-soduim chicken broth
1/4 teaspoon salt
1/4 teaspoon cumin
1/8 teaspoon cinnamon
1/8 teaspoon cayenne

Preparation:
1. In a large pot, heat the oil on medium-low.

2. Add the onion and sauté until soft (about 3 to 5 minutes). Add the turkey and brown it (about 5 minutes).

3. Add the remaining ingredients. Stir and bring to a boil, then reduce the heat and simmer for 20 minutes.

*You can use other meats instead like ground beef or chicken.

Baked potatoes can be topped with almost anything. The same with Pasta.

Baked Potatoes Toppings:

Basics:
salt
freshly ground pepper
butter (try whipped, herbed, or garlic butter)
sour cream (I use light) or yogurt

Cheese:
shredded cheddar or jack
crumbled blue or feta
grated Parmesan

Fresh herbs and seasonings:
chopped fresh basil, cilantro, oregano, or dill
crushed red pepper
seasoned salt
chopped chives

Meats:
chili
chopped ham
smoked salmon
chopped salami or pepperoni

Vegetables:
chopped scallions or red onions
steamed broccoli, green beans, or asparagus
grilled corn
beans (canned black beans or chili beans)
chopped fresh tomatoes
chopped sun-dried tomatoes
sauteed spinach
sauteed mushrooms
grilled onions
roasted red peppers
sliced jalapenos (fresh or from a jar)
thawed frozen peas (no need to cook them)
chopped avocados or guacamole

Sauces & dressings:
salsa
barbecue sauce
gravy
alfredo sauce
nacho sauce
blue cheese or ranch salad dressing
marinara sauce - or other red Italian sauce
pesto

I like a simple dish of pasta mixed with olive oil and sprinkled with basil and grains of salt.

I also make a Basic Skillet Dish

Ingredients:
Potatoes*
onions
mushrooms
diced Spam
oregano
1/2 cube bullion
salt/pepper
lemon juice
1/2 - 3/4 cup water

Prep: slice potatoes, onions and garlic --saute in skillet until onions are soft.

Add additional ingredients, cover and simmer for about 30 minutes until potatoes are done.

Optional ingredients:
salsa
squash
green peppers
cubed chicken

*instead of potatoes, use rice

Also, go online to various recipe sites like cooks.com.

Also, the forums have a recipe thread.

Good luck.

Re: lol-ing, Grocery Shopping sucks.

I get one vegetable and a couple of fruit choices. for one of course. Just fyi a kiwi is all you need for fruit for a whole day's serving. That and watermelon.
I always got the natural/organic chicken instead of the regular kind. They're sold together at kroger. Popcorn is a really really good source of wholegrain.
Grape nuts fill you up. I like them w sugar.
in college my friends kept bread in the freezer bc it would go bad otherwise.

Re: lol-ing, Grocery Shopping sucks.

Smoothies are quick and easy, good for on the go, and can be healthy.

Get a personal size blender. (20ish bucks) Oster has one that doubles as a to go cup.

One of my favorites:

Bananas (slice and freeze some and keep them on hand)
Almond milk (I sometimes substitute chocolate milk)
Chia seeds (1 tblsp) (I grind them in the coffee grinder to improve the consistency)
Carnation Instant Breakfast chocolate flavor (Not necessary if you use chocolate milk)
A small dollop of peanut butter
Kale or Spinach leaves (I tear them into smaller pieces - can't even taste it)

Add liquid to the blender first, then other ingredients. May need to stir and/or add more liquid depending on consistency preference.

I don't measure anything other than the seeds, I just go by the size of the blender and cup.

Fruit Smoothies

Frozen fruit of your preference (mango, peach, blueberry, etc.)
Ground Chia Seeds
Real Fruit Juice (tart cherry, acai, orange, etc.) - you can use ice trays to freeze some of the juice, too
Banana (frozen or fresh)
Kale or Spinach

Add liquid form of the fruit juice of your choice, then the frozen fruit or frozen juice cubes, some seeds, and some leaves, and blend away. You can always add fresh fruits, too.

Enjoy!!
